New Business Spotlight: Anna's Cakery

Eastern Europe has been in the news a lot this year, but one thing that it hasn’t received media attention for is its traditions in baking.  Anna Kuznetsov, the founder of Anna’s Cakery in Norwalk CT, was born in Belarus in its capital city of Minsk.  There, Anna learned how to bake from her mother and grandmother at an early age, but her passion for design led her to choose a career in hat design.  “I am very creative,” says Anna, “and hat design allowed me to express my artistic abilities.  But wearing hats wasn’t much in style and I found myself needing to make a change.”   

That change came in 1988 with a move to the United States.  Unable to speak English, Anna began practicing whenever she could.  When she started baking special occasion cakes for family and friends, she found that her cakes spoke for themselves, and that she was able to transform her design skills into cake decorating.  Her new career was born. 

“I had taken baking classes in Europe, but started taking extensive cake and sugar art classes here.  I realized that there are a lot of similarities between designing for fashion and cake design,” says Anna.  “For instance, the process of making flowers out of fabric is similar to making them out of gum paste or fondant.”

Today, Anna’s Cakery creates one-of-a-kind cakes and luxury sweets for all types of special occasions, including weddings, showers and parties.  Her artwork sets her cakes apart.  Her attention to detail requires her to limit her orders to a maximum of 100 cakes each year. 

Brides from all over Fairfield and Westchester counties come to their consultations with pictures of their dress, flowers or an idea of their theme and Anna designs a cake to match.  Anna enjoys working with her clients on an individual basis.  She provides recommendations that work within budget and her long list of delighted customers are in awe of the handmade and hand-painted edible art that she creates.
